PRODUCT INFORMATION
Single-grain einkorn is an ancient variety of wheat. It has a much lower gluten content and twice as much fat, protein, phosphorus and vitamins A and B than regular wheat. When einkorn beans are ground on a stone mill, they come into contact with the natural substances and minerals from which they have been feeding to grow. After grinding, the flour is sifted with the finest sieve, thus removing all Bran. White einkorn flour is suitable for any pastry temptations.
